PINK BEET WAFFLE RECIPE

Valentine’s Day is near, and I wanted to have a healthy fun pink-colored waffle for my toddlers without worrying about food coloring or dyes. Then I thought about using beets as a natural food coloring. We have been using it very frequently for juicing. If you add any beets to any food it can add lots of nutritional value while coloring your food bright reddish-pink. Today I made pink beetroot waffles and my toddlers are absolutely obsessed!
I am using Organic Beet Root Powder from Naurevibe for this recipe. you can of course substitute it with a roasted, peeled, or even ground up raw beet. Usually, if I juice the beet juice the night before I would use the leftover scraps for the pancakes. They taste just fine.

INGREDIENTS
▢1.5 Tsb Naturevibe Organic Beet Root Powder
▢2 Cups All-Purpose Flour
▢1.5 Cups Milk
▢1Tbsp Baking Power
▢2 Tbsp Plain Yogurt
▢1 Tsp Vanilla Extract
▢1 Large Egg
▢2 Tbsp Olive Oil
▢1 Tbsp Dark Chocolate Chunks (Optional*)
INSTRUCTIONS
Warm the waffle iron, spray the nonstick cooking spray
Mix all of the ingredients from above until the lumps are good.
Pour of batter onto your hot waffle iron depending on the size of your waffle maker you may pour more or less. Cook according to your waffle manufacturer’s direction**
Serve immediately with syrup, powdered sugar if desire, or any other fruit toppings.
